Fish Market
Learn all the skills needed to prepare great fish dishes. Chef Joel will cover selecting good fish, the best types of fish to use in specific dishes; how to best cook a wide variety of fish, and more. Participants will then prepare these delicious dishes: Satsuma Age (Japanese fried fish and vegetable cakes) with Lemon Soy Dipping Sauce; Catfish Étouffée with Creole Butter Biscuits; Champagne-Steamed Trout and Wild Rice Patty Melts with Maple Chipotle Mayonnaise; Creamy Crab and Brie Soup with Carrots en Croute; Shrimp, Gold Potato and Goat Cheese Turnovers with Watercress and Almond Pesto.
