The Fish and Seafood Class

Learn all the skills needed to prepare great fish dishes. Chef Joel will cover selecting good fish, selecting different types of fish for different dishes, how to best cook a wide variety of fish and more. Participants will then prepare these delicious dishes: Soft Dill-Brined Salmon with Lemon Butter and Peppered Potato Whip; Coconut & Lemongrass-Poached Cod with Thai Fried Rice; Cajun Twice-Baked Potatoes with Shrimp, Andouille and Caramelized Corn; Catfish Schnitzel with Capers and Creamy Polenta; Soft-Stewed Calamari with Tomatoes, Olives and Orzo.
